Chocolate Truffles
Peanut Butter Chocolate Truffles:
4 oz Milk Chocolate
8 oz Dark Chocolate
1/4 cup creamy Peanut Butter
1/2 cup Heavy Cream
 1 tablespoon Butter
1 pound chocolate
Sprinkles/Glitter optional
Directions:  Chop and combine milk and dark chocolate in a bowl.  Add  peanut butter.  Warm heavy cream and remove before it boils.  Add cream  to chocolate and peanut butter and let sit 1 min to slowly melt some of  the chocolate.  With a spatula, stir ganach together starting in the  middle and working your way out.  Heat to remove any remaining chocolate  chunks.  Add softened butter and stir.  Place Ganach in fridge for 2  hours to harden.  Using a small truffle scoop form ganach into small  balls.  Dip chocolate balls in tempered chocolate using our dipping  tools and garnish with sprinkles or edible glitter.
